Healthy Doesn't Have to Be Complicated

If you've ever felt like eating healthy means spending hours in the kitchen or following the latest food trend, you're not alone.

One of the biggest lessons I've learned—both as a coach and through my own health journey—is that the meals that support us the most are often the simplest ones.

The goal isn't to make every meal perfect. The goal is to have a few reliable meals you genuinely enjoy that make healthy choices easy, even on your busiest days.

This week's recipe is one of my favorites because it's packed with protein, loaded with fresh ingredients, and comes together in just a few minutes.

Protein-Packed Cottage Cheese Taco Bowl

Ingredients

  • 5 oz lean ground turkey (93/7)
  • ½ cup low-fat cottage cheese
  • ½ cup cooked brown rice or cilantro-lime rice
  • ½ cup black beans, drained and rinsed
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup diced red onion
  • ¼ avocado, sliced
  • 2 tablespoons salsa
  • Fresh lime wedge

Instructions

  1. Cook the turkey with your favorite taco seasoning.
  2. Warm the rice and black beans.
  3. Layer the lettuce, rice, beans, turkey, cottage cheese, tomatoes, onion, and avocado in a bowl.
  4. Top with salsa and finish with a squeeze of fresh lime.
